Elaboration Process

Mezcal La Costumbre is made by processes completely handmade respecting the traditional way of making mezcal that our ancestors have taught us for generations.

Harvest

For the collection of the agave, certain conditions or characteristics are necessary, such as the greenish-yellow coloration at the base of the leaves and brown at the base of the maguey, as well as the presence of dry leaves in this area. This is a simple process that consists of looking for the agaves in the hills (in case of being wild), remove them from the ground, cut the leaves and transport them to the palenque to cut them in half for a better cooking.

Baking

The next step is to obtain the sugar from the heart of the agave, so it is necessary to elevate its temperature, using a conical stone oven which is inside the earth, wood is placed in the bottom, commonly mesquite, oak tree or of pine, depending on the type of agave, then river stones are placed on the firewood, once they are red hot and the firewood has been consumed bagasse maguey is soaked in order to distribute the temperature through the oven and cook the Agaves as uniform as possible.

Pounding

Once the agaves have been cooked, they are cut into smaller pieces with a machete and placed in a mill known as a tahona. This is made of a stone wheel of 500 kg. of weight attached to an axis, which is drawn by a horse. The purpose of the trituration is to make the monosaccharides obtained in the cooking available to the microbial action, as well as the uptake of microorganisms of the medium to favor the fermentation.

Fermentation

The agave already crushed after grinding, is placed in tubs of pine wood with hot water to be fermented during a period of eight to ten days.

Distillation

In this process the separation of the alcohol and the water takes place taking advantage of its different boiling points.
The device used for distillation is the alembic. This equipment consists of four elements made of copper which due to its high thermal conductivity facilitates heat transfer by heating and cooling easily reaching the appropriate temperature of separation.
